Beginner to weight loss looking for tailored advice

Sorry ahead of time if this is out of order or has bad formatting. Im on mobile and dont really post to reddit. If i should post this elsewhere just let me know an i will move it.

Background: So im starting to actually focus on weightloss for the first time in my life. My weight has fluctuated a lot through life but I've never sat down and put energy into getting healthy.

I've been overweight my whole life and with a wife and kids i want to be healthy so I can enjoy my time with them and set a good example for them when it comes to food choices.

A few months ago I was at 230 lbs and currently i am at 208. (Im a 30 yo male and 5'-10") and my weightloss has stalled. Im trying to take things slow and make it a life style change and not shock my system and make it hard to stick with a "diet"

What ive done: Im tracking EVERYTHING I eat/drink using the myfitness app and counting calories that way. I also check fitnessfrog to see when my tdee is. (2831 for light excersise)

I cant be away from house much other than work due to family stuff so i am using a stationary bike at home (life fitness brand if it matters) and i use it 4-5 times a week for an hour. I am slowly getting better numbers, i can avereage under a 4 min pace for 50 min now! (Huge improvement for me) i dont have access to free weights but i can use a machine for curls, press, pull downs, etc. It would be super inconsistent as to when i could use it though. I do have to be "on call" at all times for the family.

Im not looking to get shredded or muscle up. Im happy with myself other than just weight. I wont complain if it happens its just not a major goal. My only goal is to get to less than 180 lbs and just generally be more healthy. At 200 lbs I will weigh less than i did in 8th grade lol.

Medical: Ive had 3 knee surgeries. Both knees have been under the knife. Both feet have as well so thats 5 total surgeries frome the knees down. (Thats why im using bike and not treadmill.)

What im asking: I guess i dont really know what im looking for other than some direction. (I feel a bit lost) do i keep doing what im doing? Should i be factoring in my diet more? Should i prioritize time or speed or effort on the bike? Have i messed up my metabolism? Is there a next step to this rabbit hole that i should go down? Should i do the fasting thing?
